3 months!

I think this boy gets cuter every day. I love how he smiles when he spots me across a room or laughs when I talk to him. We truly love having him in our family.

I love my boys...

... they melt my heart.





I can't help but smile. = )

Cousins...

Boston sure loves his cousins!




They also like to abuse each other ... here's a video of some abuse Mark caught on tape. I think Cameron got fed up with Boston hogging the toy so he decided to strike back.

Chicken Nuggets

What kid doesn't love chicken nuggets?... but have you ever checked out the ingredient list in the store bought frozen ones?... They are total junk, but since Boston is addicted to them I had to come up with an alternative that I could feel good about giving him. I got the idea from the cookbook "Deceptively Delicious" although I just made up my own recipe that was a lot less complex.

First I pureed a blender full of spinach and egg whites and then in another bowl I mixed 2 cups whole wheat Italian seasoned bread crumbs with 1 cup ground flax seed. Then I splurged on free range chicken that was antibiotic and hormone free and also cut up some wild caught halibut (don't buy farm-raised because it's also junk).
Then I coated each piece of chicken and fish first in the spinach mixture and second in the bread crumbs. I put them out on a cookie sheet and baked them for about 30 min. at 350.

It's somewhat time consuming but I just made a ton and put them all in the freezer and just heat a few up in the microwave whenever Boston wants them.


And the best part is that it's another great way to get your kids to eat spinach!
